Skum is Sweden's own candy category: a whipped, aerated sugar sweet that collapses almost instantly on the tongue, somewhere between a marshmallow and a mousse. These strawberry ones are moulded as fat pink berries with a light dusting, and the flavour is the jammy, slightly creamy strawberry of a Swedish sweet shop rather than fresh fruit. Lighter than any gummy — a 500 g bag looks twice its weight.
